Ingredients

  • 4 eggs

  • 1/2 cup of diced asparagus

  • 1/2 cup of chopped bell peppers

  • 1/4 cup of sliced green onions

  • 1 tablespoon of olive oil

  • Salt and pepper to taste

Directions

  1. In a skillet, heat olive oil over medium heat. Sauté asparagus, bell peppers, and green onions until tender.

  2. Beat eggs with salt and pepper, then pour over the vegetables in the skillet.

  3. Cook until the eggs are set, gently lifting the edges to allow uncooked egg to flow underneath.

  4. Serve warm, garnished with additional green onions if desired.
