Mango Coconut Chia Pudding
2 Servings

Why It's Kidney Friendly
Mangoes, when used in moderation, provide vitamin C and flavor without a high potassium load, and coconut milk adds a tropical twist that's low in phosphorus, making this pudding an enjoyable kidney-friendly breakfast.
Ingredients
1/4 cup of chia seeds
1 cup of light coconut milk
1/2 ripe mango, diced
1 tablespoon of shredded coconut (unsweetened)
Optional: A drizzle of honey or maple syrup for added sweetness
Directions
In a bowl, whisk together chia seeds and coconut milk. Let sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate overnight, allowing the chia seeds to absorb the liquid and thicken.
Before serving, top with diced mango and shredded coconut. Sweeten with honey or maple syrup if desired.
