Chickpea and Cucumber Tabbouleh
4 Servings

Why It's Kidney Friendly
Chickpeas provide plant-based protein and fiber, while cucumber and parsley add freshness and hydration, keeping this dish light and kidney-friendly.
Ingredients
1 can of low-sodium chickpeas, rinsed and drained
1 cup of diced cucumber
1/2 cup of chopped parsley
1/4 cup of diced red onion
Juice of 1 lemon
2 tablespoons of olive oil
Salt and pepper to taste
Directions
In a large bowl, combine chickpeas, cucumber, parsley, and red onion.
Whisk together lemon juice, olive oil, salt, and pepper in a small bowl.
Pour dressing over the salad and toss to combine.
Chill before serving to allow flavors to meld.
