Pumpkin Spice Breakfast Cookies
8 to 12 Cookies
Why It's Kidney Friendly
Pumpkin is low in potassium, and these cookies use oats and almond flour to provide a nutritious, kidney-friendly start to your day.
Ingredients
1 cup of rolled oats
1/2 cup of almond flour
1/2 cup of pumpkin puree
1/4 cup of honey
1 teaspoon of pumpkin spice mix
1 egg
Directions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix oats, almond flour, pumpkin spice, pumpkin puree, honey, and egg until well combined.
Drop spoonfuls of the mixture onto the prepared baking sheet.
Flatten slightly with a fork.
Bake for 12-15 minutes, until golden brown.
Let cool before serving.
