Grilled Lemon Herb Chicken with Zucchini

Why It's Kidney Friendly

Chicken is a lean protein, and grilling it with zucchini offers a flavorful, kidney-friendly meal that's perfect for the summer season.

Ingredients

  • 2 chicken breasts

  • 2 zucchinis, sliced

  • 2 tablespoons of olive oil

  • Juice of 1 lemon

  • 1 tablespoon of fresh oregano, chopped

  • Salt and pepper to taste

Directions

  1. Preheat grill to medium-high heat.

  2. In a bowl, mix olive oil, lemon juice, oregano, salt, and pepper. Brush mixture over chicken and zucchini slices.

  3. Grill chicken for 5-7 minutes on each side, until cooked through. Grill zucchini until tender, about 3 minutes per side.

  4. Serve hot, enjoying the fresh and vibrant flavors.
