Ingredients

  • 1/2 cup pumpkin puree

  • 1 cup unsweetened almond milk

  • 1/2 teaspoon pumpkin spice blend

  • 1 tablespoon honey or maple syrup

Directions

  1. Combine all ingredients in a blender.

  2. Blend until smooth.

  3. Pour into a glass and serve.

Ingredients

  • 2 cups diced pumpkin

  • 2 cups mixed veggies (lettuce, bell peppers, cucumber)

  • 1 tablespoon olive oil

  • 1 tablespoon of light vinaigrette

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F (200°C).

  2. Toss diced pumpkin with olive oil, salt, and pepper.

  3. Spread on a baking sheet and roast for 20-30 minutes, until tender.

  4. Allow to cool before adding to the mixed veggies.

  5. Toss the salad with light vinaigrette and serve.
