Breakfast: Pumpkin Spice Smoothie

Pumpkin is low in potassium and high in fiber, and almond milk adds a touch of creaminess without overloading on protein, making this smoothie a festive, kidney-friendly breakfast.
Ingredients
1/2 cup pumpkin puree
1 cup unsweetened almond milk
1/2 teaspoon pumpkin spice blend
1 tablespoon honey or maple syrup
Directions
Combine all ingredients in a blender.
Blend until smooth.
Pour into a glass and serve.

Ingredients
2 cups diced pumpkin
2 cups mixed veggies (lettuce, bell peppers, cucumber)
1 tablespoon olive oil
1 tablespoon of light vinaigrette
Salt and pepper to taste
Directions
Preheat the oven to 400°F (200°C).
Toss diced pumpkin with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20-30 minutes, until tender.
Allow to cool before adding to the mixed veggies.
Toss the salad with light vinaigrette and serve.
