Breakfast: Apple Cinnamon Oatmeal
Why It's Kidney Friendly
Apples are low in potassium and high in fiber, and oats provide a heart-healthy start to the day, making this oatmeal a kidney-friendly breakfast.
Ingredients
1/2 cup of old-fashioned rolled oats
1 apple, diced
1 teaspoon of cinnamon
1 tablespoon of honey
Directions
Cook oats according to package instructions.
Add diced apples, cinnamon, and honey.
Stir well and serve warm.

Lunch: Butternut Squash Soup

Butternut squash is a low-potassium vegetable that's high in fiber and vitamin A, making this soup a healthy transition into fall.
Ingredients
2 cups of peeled and diced butternut squash
2 cups of low-sodium vegetable broth
1/2 onion, chopped
Salt and pepper to taste
Directions
In a pot, combine butternut squash, broth, and onions.
Cook until squash is tender.\
Blend until smooth using an immersion blender or regular blender.
Season with salt and pepper, and serve warm.
