Whole-wheat tortillas and eggs provide fiber and protein, making these kidney-friendly breakfast burritos a perfect outdoor breakfast.

Ingredients

  • 2 whole-wheat tortillas

  • 2 scrambled eggs

  • 1/4 cup shredded low-sodium mozzarella cheese

  • Chopped bell peppers

Directions

  1. Lay the tortillas flat.

  2. Add scrambled eggs, cheese, and bell peppers to each tortilla.

  3. Roll up tightly and serve, or wrap in foil for transport.

Picnic Lunch: Quinoa & Chicken Salad

Ingredients

  • 1 cup cooked quinoa

  • 1/2 cup cooked chicken, diced

  • 1/4 cup diced bell peppers and cherry tomatoes

  • 2 tablespoons of light vinaigrette

Directions

  1. Mix all ingredients in a container with a secure lid.

  2. Serve chilled or at room temperature.
