Spinach and Mushroom Egg Muffins

6 to 12 Muffins

Why It's Kidney Friendly

Eggs provide high-quality protein suitable for kidney health, while spinach and mushrooms add vitamins and minerals without excess potassium.

Ingredients

  • 6 eggs

  • 1 cup of chopped spinach

  • 1/2 cup of diced mushrooms

  • 1/4 cup of milk (almond or low-fat cow's milk)

  • Salt and pepper to taste

  • Cooking spray or olive oil for greasing

Directions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or olive oil.

  2. In a bowl, whisk together eggs, milk, salt, and pepper.

  3. Stir in chopped spinach and diced mushrooms.

  4. Pour the mixture into the muffin tin, filling each cup about 3/4 full.

  5. Bake for 20-25 minutes, or until the muffins are set and lightly golden.

  6. Let cool for a few minutes before serving.
