Grilled Zucchini and Quinoa Salad
2 to 4 Servings

Why It's Kidney Friendly
Zucchini is low in potassium, and quinoa provides a complete protein source, making this salad a light, kidney-friendly lunch.
Ingredients
1 cup of cooked quinoa
2 zucchinis, sliced and grilled
1/2 cup of cherry tomatoes, halved
1/4 cup of chopped fresh basil
Dressing: 2 tablespoons olive oil, 1 tablespoon red wine vinegar, salt, and pepper
Directions
Grill zucchini slices until tender and slightly charred.
In a large bowl, combine quinoa, grilled zucchini, cherry tomatoes, and basil.
Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
Toss salad with dressing and serve chilled or at room temperature.
