Lemon Herb Pork Chops with Spring Vegetable
2 Servings

Why It's Kidney Friendly
Pork chops provide a lean protein source, and pairing them with seasonal vegetables like carrots and asparagus makes for a balanced, kidney-friendly dinner.
Ingredients
2 pork chops
1 bunch of asparagus, trimmed
1 cup of baby carrots
2 tablespoons of olive oil
Juice of 1 lemon
1 teaspoon of dried thyme
Salt and pepper to taste
Directions
Preheat the oven to 375°F (190°C).
Toss asparagus and carrots with half the olive oil, salt, and pepper. Arrange around the edges of a baking dish.
Rub pork chops with remaining olive oil, lemon juice, thyme, salt, and pepper. Place in the center of the dish.
Bake for 25-30 minutes, until pork is cooked through and vegetables are tender.
Serve hot, enjoying the fresh and vibrant flavors.
