BREAKFAST
Cranberry Orange Scones
6 to 8 Scones
Why It's Kidney Friendly
Cranberries are low in potassium and phosphorus, and using whole wheat flour adds fiber, making these scones a delicious, kidney-friendly breakfast option.
Ingredients
1 cup of whole wheat flour
1/4 cup of dried cranberries
2 tablespoons of sugar
1 teaspoon of baking powder
1/4 teaspoon of salt
1/4 cup of cold unsalted butter, cubed
1/4 cup of orange juice
1 egg, beaten
Directions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a bowl, combine flour, sugar, baking powder, and salt.
Cut in the butter until the mixture resembles coarse crumbs.
Stir in cranberries, orange juice, and beaten egg until just combined.
Drop dough by spoonfuls onto the prepared baking sheet.
Bake for 12-15 minutes, until golden brown.
Serve warm.
