Breakfast: Apple-Cinnamon Overnight Oats
Why It's Kidney Friendly
Apples are low in potassium, and oats provide heart-healthy fiber, making these overnight oats a comforting, kidney-friendly breakfast.
Ingredients
1/2 cup of old-fashioned rolled oats
1/2 cup of unsweetened almond milk
1 apple, diced
1 teaspoon of cinnamon
1 tablespoon of honey or maple syrup
Directions
Mix oats, almond milk, apples, cinnamon, and sweetener in a mason jar or airtight container.
Cover and refrigerate overnight.
Uncover and stir before serving.

Dinner: Stir-Fried Chicken with Apples & Veggies

Ingredients
1/2 pound of chicken breast, thinly sliced
1 apple, thinly sliced

Herbs and spices to taste (garlic, pepper, thyme)
Directions
In a pan, heat olive oil over medium heat.
Add sliced chicken and stir-fry until cooked.
Add apples and veggies, stirring until tender.
Sprinkle with herbs and spices, and serve warm.
