Dinner: Turkey Meatballs with Mashed Sweet Potatoes

Ingredients

  • 1/2 pound of ground turkey

  • 1 sweet potato, boiled and mashed

  • Low-sodium tomato sauce for topping

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).

  2. Combine ground turkey, veggies, salt, and pepper and form into meatballs.

  3. Place meatballs on a baking sheet and bake for 15-20 minutes, until cooked through.

  4. Top meatballs with tomato sauce and serve with a side of mashed sweet potatoes.
