Breakfast: Warm Quinoa & Pear Porridge

Why It's Kidney Friendly

Quinoa is a great source of plant-based protein, and pears provide fiber and are lower in potassium, making this porridge a fulfilling breakfast.

Ingredients

  • 1/2 cup of cooked quinoa

  • 1 pear, diced

  • 1/2 teaspoon of cinnamon

  • 1 tablespoon of honey or maple syrup

Directions

  1. In a saucepan, mix cooked quinoa, diced pear, cinnamon, and sweetener.

  2. Heat over low heat until warm.

  3. Serve with an additional sprinkle of cinnamon, if desired.

Dinner: Baked Sweet Potato & Tuna Salad

Why It's Kidney Friendly

Sweet potatoes provide fiber and a good dose of vitamin A, and tuna adds lean protein, making this a nutrient-dense and warming dinner.

Ingredients

  • 1 medium sweet potato

  • 1 can of low-sodium tuna, drained

  • 1/4 cup diced bell peppers and onions

  • 1 tablespoon of low-sodium mayo or Greek yogurt

Directions

  1. Preheat the oven to 400°F (200°C).

  2. Poke the sweet potato with a fork a few times and place it on a baking sheet.

  3. Bake for 45 minutes to 1 hour, until soft.

  4. In a bowl, mix tuna, diced veggies, and mayo or yogurt.

  5. Once the sweet potato is cooked and cooled slightly, slice it open and stuff with the tuna salad.
