Herb-Roasted Salmon with Spring Vegetables
2 Servings

Why It's Kidney Friendly
Salmon is rich in omega-3 fatty acids, and pairing it with spring vegetables like asparagus and carrots creates a balanced, kidney-friendly dinner full of fresh flavors.
Ingredients
2 salmon fillets
1 bunch of asparagus, trimmed
1 cup of baby carrots
2 tablespoons of olive oil
1 tablespoon of fresh dill, chopped
Salt and pepper to taste
Directions
Preheat the oven to 400°F (200°C).
Arrange salmon, asparagus, and carrots on a baking sheet. Drizzle with olive oil and season with dill, salt, and pepper.
Roast for 15-20 minutes, until salmon is cooked through and vegetables are tender.
Serve immediately, enjoying the harmony of flavors.
