Breakfast: Spiced Apple and Oat Pancakes
Why It's Kidney Friendly
Apples are low in potassium, and using oats instead of flour boosts fiber, making these pancakes a delicious, kidney-friendly breakfast option.
Ingredients
1 cup of rolled oats
1 cup of unsweetened almond milk
1 apple, peeled and grated
1 egg
1 teaspoon of cinnamon
1/2 teaspoon of baking powder
1 tablespoon of honey
1 tablespoon of vegetable oil
Directions
In a blender, combine oats, almond milk, egg, cinnamon, baking powder, and honey. Blend until smooth.
Stir in the grated apple.
Heat vegetable oil in a non-stick skillet over medium heat.
Pour batter into the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with a drizzle of honey or maple syrup.

Lunch: Roasted Beet and Arugula Salad

2 cups of arugula

Directions
Preheat the oven to 400°F (200°C). Wrap beets in foil and roast for 40 minutes, until tender. Let cool, then slice.
In a large bowl, combine arugula, sliced beets, goat cheese, and walnuts.
Drizzle with balsamic vinaigrette and toss to combine.
Serve immediately.

Ingredients
1 cup of pearl barley
2 cups of low-sodium vegetable broth
1 cup of sliced mushrooms
1 small onion, chopped
2 cloves of garlic, minced
1 tablespoon of olive oil
1/4 cup of grated Parmesan cheese
Salt and pepper to taste
Directions
In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until translucent.
Add mushrooms and cook until softened.
Stir in the barley and cook for 2 minutes, coating it with the oil and vegetables.
Gradually add the vegetable broth, 1/2 cup at a time, stirring frequently until absorbed before adding more.
Continue until the barley is tender and creamy. Stir in Parmesan cheese, salt, and pepper.
Serve warm.
