Gingerbread Muffins

Why It's Kidney Friendly

Using almond flour keeps phosphorus low, and spices like ginger and cinnamon add festive flavor without extra sodium, making these muffins a delightful, kidney-friendly breakfast.

Ingredients

  • 1 cup of almond flour

  • 1/4 cup of molasses

  • 2 eggs

  • 1 teaspoon of ginger

  • 1 teaspoon of cinnamon

  • 1/2 teaspoon of baking soda

Directions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.

  2. In a bowl, mix almond flour, molasses, eggs, ginger, cinnamon, and baking soda until smooth.

  3. Pour batter into muffin cups, filling each about 2/3 full.

  4. Bake for 20-25 minutes, until a toothpick inserted in the center comes out clean.

  5. Let cool before serving.
