Breakfast: Baked Apple Cinnamon French Toast

Ingredients

  • 2 slices of low-sodium bread, cubed

  • 1 small apple, peeled and diced

  • 1/2 cup of unsweetened almond milk

  • 1 egg white

  • 1 teaspoon of cinnamon

  • 1 tablespoon of maple syrup

Directions

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the almond milk, egg white, and cinnamon.

  3. Layer the bread cubes and diced apple in a small baking dish.

  4. Pour the almond milk mixture over the bread and apples.

  5. Drizzle with maple syrup.

  6. Bake for 20-25 minutes, until golden brown.

  7. Serve warm.

Lunch:  Sweet Potato and Black Bean Tacos

Ingredients

  • 1 medium sweet potato, peeled and diced

  • 1/2 cup of cooked black beans (rinsed to reduce sodium)

  • 1 small avocado, diced

  • 1/4 cup of chopped cilantro

  • 1 teaspoon of cumin

  • 1 tablespoon of olive oil

  • 4 small corn tortillas

  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F (190°C).

  2. Toss the diced sweet potato with olive oil, cumin, salt, and pepper.

  3. Spread on a baking sheet and roast for 20 minutes, until tender.

  4. Warm the corn tortillas in a skillet over medium heat.

  5. Fill each tortilla with roasted sweet potato, black beans, avocado, and cilantro.
