Breakfast: Baked Apple Cinnamon French Toast
Why It's Kidney Friendly
Apples are low in potassium, and using almond milk keeps the phosphorus low, making this a delicious, kidney-friendly start to your day.
Ingredients
2 slices of low-sodium bread, cubed
1 small apple, peeled and diced
1/2 cup of unsweetened almond milk
1 egg white
1 teaspoon of cinnamon
1 tablespoon of maple syrup
Directions
Preheat the oven to 350°F (175°C).
In a bowl, mix the almond milk, egg white, and cinnamon.
Layer the bread cubes and diced apple in a small baking dish.
Pour the almond milk mixture over the bread and apples.
Drizzle with maple syrup.
Bake for 20-25 minutes, until golden brown.
Serve warm.

Lunch: Sweet Potato and Black Bean Tacos
Why It's Kidney Friendly
Sweet potatoes are lower in potassium compared to regular potatoes, and black beans provide a good source of plant-based protein, making these tacos a balanced, kidney-friendly lunch.
Ingredients
1 medium sweet potato, peeled and diced
1/2 cup of cooked black beans (rinsed to reduce sodium)
1 small avocado, diced
1/4 cup of chopped cilantro
1 teaspoon of cumin
1 tablespoon of olive oil
4 small corn tortillas
Salt and pepper to taste
Directions
Preheat the oven to 375°F (190°C).
Toss the diced sweet potato with olive oil, cumin, salt, and pepper.
Spread on a baking sheet and roast for 20 minutes, until tender.
Warm the corn tortillas in a skillet over medium heat.
Fill each tortilla with roasted sweet potato, black beans, avocado, and cilantro.
Serve immediately.

Dinner: Herb-Crusted Pork Tenderloin

Ingredients
1 pork tenderloin (about 1 pound)
1 tablespoon of olive oil
1 teaspoon of dried rosemary
1 teaspoon of dried thyme
1 teaspoon of garlic powder
Salt and pepper to taste
Directions
Preheat the oven to 400°F (200°C).
Rub the pork tenderloin with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
Place on a baking sheet and roast for 25-30 minutes, until the internal temperature reaches 145°F (63°C).
Let the pork rest for 5 minutes before slicing.
Serve with a side of steamed vegetables.
