Pumpkin Spice Chia Pudding
2 Servings
Why It's Kidney Friendly
Pumpkin is low in potassium, and chia seeds provide fiber and healthy fats, making this pudding a nutritious, kidney-friendly breakfast option.
Ingredients
1/2 cup of pumpkin puree
1 cup of unsweetened almond milk
1/4 cup of chia seeds
1 teaspoon of pumpkin spice mix
1 tablespoon of maple syrup
Directions
In a bowl, mix pumpkin puree, almond milk, pumpkin spice, and maple syrup until smooth.
Stir in the chia seeds until well combined.
Cover and refrigerate overnight or for at least 4 hours.
Stir before serving and enjoy cold.
