Spring Orzo Salad with Lemon Vinaigrette
2 to 4 Servings

Why It's Kidney Friendly
Orzo is a light pasta option, and pairing it with a lemon vinaigrette and kidney-friendly vegetables like arugula and cherry tomatoes creates a refreshing lunch.
Ingredients
1 cup of cooked orzo, cooled
1 cup of arugula
1/2 cup of cherry tomatoes, halved
1/4 cup of sliced cucumbers
Dressing: 2 tablespoons olive oil, 1 tablespoon lemon juice, salt, and pepper
Directions
Combine orzo, arugula, tomatoes, and cucumbers in a bowl.
Whisk together olive oil, lemon juice, salt, and pepper for the dressing.
Toss salad with dressing just before serving.
